You can never go wrong with an old-fashioned recipe from Grandma's recipe box. This classic Bisquick Zucchini Casserole is a recipe for quiche-like squares filled with zucchini, cheese, onion, herbs, and spices.

Since it's a recipe with Bisquick, it couldn't be easier to throw together. As a plus, you'll still get that comforting taste that will make you think fondly of days spent at Gran's house.

This easy zucchini casserole makes an irresistibly-good brunch, lunch or side dish recipe. It really doesn't matter what the occasion, this recipe is sure to be a hit. Ingredients

  • 5 eggs, lightly beaten
  • 1/2 cup vegetable oil
  • 1/2 cup grated Cheddar cheese
  • 1/2 teaspoon salt
  • 1 teaspoon ground Italian spices (See note)
  • 3 cups thinly sliced zucchini
  • 1/2 cup finely chopped onion
  • teaspoon
  • 1 teaspoon finely minced garlic
  • 2 cups baking mix (i.e. Bisquick)

Instructions

  1. Preheat oven to 350 degrees F and spray a 9x13-inch casserole dish with cooking spray.

  2. Whisk together the eggs, oil, cheese, salt, and spices. Add the zucchini and onion and toss to mix well. Add the baking mix and stir to combine until no dry mixture remains.

  3. Spoon into the prepared casserole and smooth the top. Bake for about 30 minutes, until the top is golden brown and puffy.

  4. Cut into squares to serve while warm or at room temperature.

Notes

  1. If you have a premixed bottle of Italian spices that is the thing to use. If not, make a mixture of dried oregano, basil, and rosemary and use 1 teaspoon of this mixture.
     

  2. This is a perfect dish to serve for brunch, as the centerpiece of lunch with a salad, or as a side dish at dinner.  It travels well and would work well for a potluck as it does not need to be piping hot to be enjoyed.

We really enjoy vegetarian dishes and this one looks delicious. I Goooogled and found "what to use instead of Bisquick" (which is not available in South Africa) so we are all set! Zucchini, onion and cheese is a great combination so I am sure this is going to be a delicious dish.

THERE IS AN INGREDIENT MISSING IN YOUR RECIPE. IT ONLY SAYS"TEASPOON" . IT IS BETWEEN ONIONS AND BISQUICK. WHAT IS IT? THANKS!

Did you ever hear back what the missing ingredient (teaspoon) was? I see there are lots of comments on how great the recipe is but I do not see any answers to your question.

I am vegetarian and zucchini is one of my favorite vegetables so when I saw the picture of this in the newsletter, my first thought was, "please let it be meatless". Sure enough it was. I am definitely saving this one and would like to make it in the near future! It looks so delicious!

I'm definitely going to make this for my daughter who has told me that she has become a vegetarian. She has been living in Hong Kong for a long time and is coming home. I want to make her some of these as an easy snack when feeling peckish. She is coming home to stay whilst she gets settled again in her home country. I am trolling for all of the vegetarian recipes for her and everything is going to be made with tons of love!

What a great way to highlight and use up extra zucchini...I never know what to do with it and usually, end up giving it away. I've heard of zucchini bread and even cakes but this is something different for a nice change. Spicy sausage might even be a nice addition and compliment to this cheesy deliciousness if you're wanting something a little more hearty.

Zucchini is a firm favorite in our family so I am always on the lookout for new and interesting recipes and this one ticks all the boxes. We had a barbecue today and I tried this Grandmas Zucchini Squares recipes as an accompaniment. It disappeared so fast that I could tell it was as huge hit so will definitely be making it again.

I am so happy I found this recipe. I used to make this when I grew zucchini, but I've misplaced the recipe. I actually have a file of zucchini recipes, because when you grow zucchini, you end up with lots of them!

You zucchini can never have too many recipes. Has anyone tried using shredded zucchini instead of sliced. It seems like the zucchini would be more spread throughout the dish. Maybe I will try doing that. I love zucchini and cheese together. I'll add more cheese though.

I agree wholeheartedly with the others-I love this zucchini recipe! I always keep Bisquick in my pantry. I used a grated Asiago/Parm/Romano cheese for a bolder flavor and a bit more garlic and onion. It is a great way to use up your garden zucchini! I think this would make a good dish to take to a summer potluck. It can be eaten at room temperature and it's filling comfort food but getting your veggies, too, and it's inexpensive so you can feed a lot of people! Perfect!
