- 4 slices thick bread, cut into cubes
- 1/4 cup unsalted butter, melted
- 2 cups cubed zucchini
- 1 large onion, chopped
- 1/2 cup sour cream
- 1 teaspoon Herbs de Provence
- 1 teaspoon garlic salt
- 1 beaten egg
- 1/4 cup grated Parmesan cheese
- 2 cups shredded Colby-Jack cheese

Instructions

Heat oven to 350 F. Lightly grease a 9x13-inch baking dish with cooking spray.

In a medium mixing bowl place the bread cubes and mix with the melted butter.

Add the zucchini, onion, sour cream, Herbs de Provence, garlic salt, and egg. Mix until combined.

Spoon the mixture into the baking dish.

Sprinkle parmesan over the casserole the top with the Colby-Jack cheese.

Cover with foil and bake for 30 minutes. After 30 minutes remove the foil and bake for an additional 30 minutes.

It doesn't really get much easier -- or tastier -- than this zucchini casserole recipe. The zucchini itself comes out nice and tender and juicy, but not mushy, and the onion really enhances the flavor. Plus CHEESE. Cheese makes a casserole, as far as I'm concerned, and this one is no exception. It really is so simple - put the ingredients together and pop it in the oven to bake.
