  • 1 cup sour cream
  • 1/2 cup margarine, melted
  • 1 (8-1/2-ounce) package Jiffy Corn Muffin mix
  • 2 eggs


  1. Preheat oven to 300 degrees F.

  2. Drain can of whole corn (not creamed corn). Then, combine all ingredients in a large bowl and mix thoroughly.

  3. Pour into a 2-quart casserole dish.

  4. Bake for 1 hour 40 minutes.

This Cornbread Casserole was a scrumptious side dish at the barbecue we had for family and friends over the weekend. Corn muffin mix is not available here in South Africa so I used a plain mix instead and it worked fine. The recipe is really easy to make which was great cos I had lots to do and we all enjoyed it very much. Our teenage son suggested that next time we add crumbled crispy bacon so we will have to give that a try.

It's funny how many different cornbread recipes I have. Some are from scratch some use Jiffy cornbread mix. Some of my cornbread recipes are sweet, some spicy with jalapenos, and some traditional. I like all of them! I make cornbread with my chili and with my meatloaf. I will definitely make this recipe.

I've been looking for cornbread casserole recipe for a while - it is the perfect dish for a spicy southwest meal! Also perfect with a bowl of chili - spoon some on top - perfect!! Can't wait to make this on a cold rainy night.

I love making this with cans of southwest corn instead of just regular corn! It's so good. I bring it to all of my family gatherings, and I always go home with an empty casserole dish.
