Fresh Corn Soup

Fresh Corn Soup is a healthy soup recipe that will become one of your favorites. Made with fresh corn for a sweet succulent flavor, you won't be able to put down the spoon.

Ingredients

  • 2 teaspoons canola oil
  • 1 small onion, chopped
  • 1 3/4 cup chicken stock
  • 2 ears of corn plus cobs
  • 1/8 teaspoon cumin
  • 1/4 teaspoon coriander
  • 1/2 teaspoon salt
  • 1 teaspoon fresh chives, finely chopped (optional)
  • salt and pepper, to taste
  • 3/4 cup kefir

Instructions

  1. Cut corn from cob and reserve both corn and cobs.
     
  2. Heat oil in a stock pot over medium-high heat. Saute onion for 2 minutes.
     
  3. Add chicken stock and bring to a boil. Turn heat down to simmer and add corn, cobs, cumin, coriander and salt. Simmer for 15 minutes.
     
  4. Turn off heat. Remove 2 tbsp of corn from the pot and set aside. Remove cobs and pour the remaining soup into the blender. Blend until smooth.
     
  5. Stir in kefir, reserved corn kernels and chives. Season with salt and pepper to taste.
     
  6. Serve immediately or chill at least 2 hours for a cold soup.

I believe that kefir is a fermented dairy beverage, like a yogurt drink. I have heard things before about its health benefits, since it has a high yeast content and therefore is rich in probiotics. If you can't find the stuff, or are unsure about it, I'm sure you could substitute milk or half and half, or just leave it out. I have had corn soups before with no dairy, and they turn out great. If you blend some of the corn up at the end, it makes it's own sort of "cream."

This looks good and I want to try it. However, I am still confused about the kefir. What is kefir? In looking up the definition it is listed as a cream and a grain. Which does this recipe use?

no where in the ingredients do you list kefir, and in the instructions #5 you say to stir in the kefir. what is it and how much do you need?? kindly advise. Thanks

Instruction #5 says to 'Stir in kefir,' however, kefir is not listed in the Ingredients! Are we talking about the yogurt-like drink? The soup in the photo does not seem very creamy?

This sounds like a fresh corn soup one of my great aunts used to make and I loved it. but, the instructions state to blend, then add kefir, reserved corn and chives. I do not see kefir on the list of ingredients. Am I missing something? I can't wait to try this but don't want to if I'm missing a vital ingredient
