- 1 pound ground Italian sausage
- 1 yellow onion, chopped
- 2 garlic cloves, minced
- 2 cans (14 oz) chicken broth
- 1 (15-ounce) can cannellini beans, rinsed
- 2 cans (14.5 oz) Italian stewed tomatoes
- 2 cups fresh baby spinach
In a large skillet over medium heat simmer (stirring frequently) sausage, onion and garlic until fully cooked.
Add mixture to 6 qt slow cooker insert followed by remaining ingredients, less spinach.
Cover and cook on high for 2 hours.
Just before serving add spinach leaves and stir until wilted.
