Ingredients

  • 900 grams baby potatoes
  • Sea salt & fresh ground black pepper to your taste
  • 3 tablespoons olive oil
  • 1 teaspoon dried basil leaves
  • 1 teaspoon dried rosemary
  • 1 teaspoon chili flakes
  • 3 garlic cloves minced
  • 1 cup grated Parmesan
  • a small bunch of fresh chopped basil (optional)
  • 1 cup sour cream (optional)
  1. Preheat the oven to 200C/400F and spray a large baking sheet with cooking oil.

  2. Place the potatoes in a large stockpot and fill it with water, just enough to cover them.

  3. Bring it to boil then lower the heat and simmer for 10-12 minutes, or until they are fork tender, then drain.

  4. Arrange the potatoes on the baking sheet, making sure you leave some space in between them.

  5. Using a potato masher, press down in the middle to lightly smash your potato; repeat the process for all of them.

  6. In a small bowl, mix the olive oil with herbs and garlic.
