Finally a delicious recipe for leftover mashed potatoes. Easy Homemade Tater Tots turns last night's side dish into everyone's favorite fast food treat. All you need for these easy homemade tots is mashed potatoes, eggs, flour and Panko bread crumbs. Then fry them for just a few minutes and you're ready to enjoy fresh tater tots. These are so delicious, you may even like them better than the ones from fast food restaurants. You definitely won't let those leftover mashed potatoes go to waste again.

These are not Tater Tots. These are croquettes. Delicious, but not unique or original. My great-grandmother made them back in the 20s. My grandmother improved on her mother's recipe by introducing grated onion into the mix. In later years, she took to rolling them in a bread crumb mixture that included Parmesan cheese. Now those were beyond delicious!

I don't understand, what are leftover mashed potatoes? ) This sounds super easy and tasty, we'll have to give it a try. TFS

add cheese, bacon bits or onion chives...mmmm
