Caramelized Onion Rémoulade

Ingredients
- 2 large egg yolks at room temperature
- 4 tsp fresh lemon juice
- 2 tsp cold water
- 2 tsp dijon mustard
- ½ tsp kosher salt
- 1½ cups canola oil
- 3 oz large yellow onion
- 2 tbsp butter
- 1/4 cup horseradish
- Salt to taste
Instructions

Place the egg yolks, lemon juice, and cold water in a blender or food processor.

Process for 30 seconds and then add mustard.

Process again and slowly add the oil until the mixture emulsifies and becomes slightly thick.

Season with salt to taste and transfer to a clean jar.

Dice the onions.

Melt butter in a saucepan and add the onions.

Sauté for 2 minutes and turn down the heat to low until caramelized for 10 minutes more.

Let the caramelized onions cool completely.

Combined the mayonnaise and the caramelized onions.
