    Mango Salsa Verde

    Ingredients

    • 1 large white onion, quartered
    • 3 garlic cloves
    • 3 jalapeno peppers
    • 6 tomatillos
    • 2 teaspoons vinegar
    • 2 teaspoons olive oil
    • juice of 1 lime
    • salt
    • freshly ground black pepper
    • 4 6-ounce cans salsa verde
    • 1 large ripe mango, diced

    Instructions

    In a blender, puree onion, garlic, jalapeno, tomatillo, vinegar, oil, lime juice, salt and pepper. Place salsa verde and mango in a bowl and combine with pureed mixture. Refrigerate overnight.
