  • 1/2 teaspoon black pepper
  • 1 1/2 cup croutons

There's nothing like a light salad for dinner in the summer. The dressing part of the recipe reminds me of the one I make that is for homemade ranch. My kids love it and I bet it's absolutely delish on this salad. I think adding some chicken to it will be awesome. Also a shredded parmesan cheese just adds so much to any dish!!!

I love the flavor that the little bit of Worcestershire sauce gives to the dressing in this summery salad, since it replicates the umami flavor of anchovies, (standard in any traditional Caesar salad dressing) yet doesn't have that fishy aftertaste. For a little more nutrition, you could use fresh spinach or even chopped kale in this recipe.

I am not go to wait for Summer to enjoy this salad. I am always looking for hardy salads that constitute a meal. This salad has all the requirements for a delicious, lunch with the girls, no matter what the season. Some crispy Italian bread and don't forget the wine.

There is one recipe I have used over a few times and that is Mama's Pizza Casserole. This is fabulous and that is my grandson's words. Every time I see it posted I know it is a good recipe and it is posted regularly. I always have pepperoni on hand, on of my favorite foods and macaroni and cheese is a staple. The sauce can easily be made if not available, this is just a very convenient recipe!

This salad looks absolutely luscious. With the added chicken it is certainly a light meal, perfect for a hot summer's evening with a nice cold glass of chardonnay. Hmmmm you want to go and make it right now don't you? Well I do as it is hot here at this time of the year. Perhaps 'pin' it for when summer comes around to your country as I'm sure this is a bit winner!
