Delicious Curry Rice

- 1 cup long-grain rice
- 10 oz boneless chicken thigh
- 18 oz chicken stock
- 10 oz green bell pepper
- 6 oz onion
- 1 tsp curry powder
- 1 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup frozen peas
- 4 oz green onions
- 1 tbsp canola oil
- 2 tbsp of water
Using a rice cooker, cook the rice in chicken stock.
Add diced chicken thigh to the rice and stir.
The cooking process only take 15 - 20 minutes.
Meanwhile, in a large skillet, sauté chopped onions and green bell pepper with a tablespoon of oil for 5 minutes on low heat.
Add two tablespoon of water and curry powder. Stir and simmer for 1 minute.
Season with salt and pepper.
Add the cooked rice and peas.
Mix well until all the grains are covered with curry powder.
Check the seasoning and adjust. Sprinkle with chopped green onions.
