Cheesecake Factory Cajun Jambalaya Pasta

Ingredients

  • 4 ounces butter
  • 2 teaspoons Cajun spice mix
  • 1 pound boneless, skinless chicken breasts, cut into small pieces
  • 1 pound fresh linguini pasta
  • 1/2 cup clam juice
  • 2 ounces green bell peppers, cut into thin strips
  • 2 ounces red bell peppers, cut into thin strips
  • 4 ounces red onions, cut into thin strips
  • 1/2 pound fresh medium shrimp, peeled, deviened, tails removed
  • 1/2 cup diced tomatoes

Instructions

1. Place the butter into a saute pan. Allow the butter to melt slightly. Add the seasoning into the pan and stir together with the melted butter.Add the chicken into the pan and continue to cook until the chicken is about half done.

2. While the chicken is cooking, carefully place the pasta into boiling water and cook until al dente.

3. Pour the clam juice into the pan. Add the peppers and onions.Cook for another minute, making sure the vegetables are heated through and the chicken is almost done.

4. Add the shrimp into the pan. Toss the ingredients together and continue to cook until the shrimp are almost done.

5. Add the tomatoes into then pan. Continue to cook mixture until both the shrimp and chicken are thoroughly cook through.

6. Place some pasta into each bowl. Spoon equal portions of the jambalaya mixture into each bowl over the pasta.

A whole stick of butter!!!! That's 4 ounces - a quarter of a pound! We are a family of two and don't use that much butter in a 7-day week. My arteries are clogging up just thinking about it. An alternate cooking method would be to lightly brush your chicken breasts with some melted butter and heavily dust with the Cajun seasoning (preferably one low in salt) broil until cooked. Set aside keeping warm. Saute the vegetables and shrimp with no more than 1 tablespoon of butter (olive oil is better or half oil half butter). When shrimp is done, slice the chicken in strips, add to veggies shrimp and stir in pan to combine spoon equally over pasta in bowls and enjoy a much healthier dinner.

Did not look or taste anything like the real thing.
