Steamed Apple prune Pudding

Steamed Apple prune Pudding

  • 3/4 cup soft butter or margarine
  • 1/2 cup finely packed light brown sugar
  • 1/4 cup molasses
  • 4 eggs, separated
  • 1 cup unsifted all-purpose flour
  • 1/2 teaspoon each of salt and baking soda
  • 1/2 teaspoon each of ground nutmeg, cinnamon, cloves, and allspice
  • 1 cup chopped uncooked prunes
  • 1 cup chopped peeled tart apple
  • 1/4 cup diced citron
  • Hard sauce

Cream butter and sugar until light and fluffy; beat in molasses. Add egg yolks, one at a time, beating after each addition. Add sifted dry ingredients. Stir in fruits. Then fold in stiffly beaten egg whites. Pack in greased 1 1/2-quart pudding mold. Cover and steam for 3 hours, or until done. Serve warm with hard sauce. Makes 8 to 10 servings.
