Homemade Vanilla Bean Pudding

Pudding is an age-old dessert that is loved by all. Rich and creamy, and with an elegant flavor that you won't be able to resist, Homemade Vanilla Bean Pudding will have you eating spoonful after spoonful. Treat your family to an easy dessert recipe that is great any time of year. The pudding that you buy in the grocery store will not even compare in flavor to this delicious pudding recipe.   • 2 1/4 cups whole milk, divided
  • 1/2 vanilla bean, seeds + pod
  • 1/2 cup granulated sugar
  • 3 tablespoons cornstarch
  • 1/4 teaspoon salt
  • 1 egg yolk
  • 1 tablespoon butter
  1. In a medium saucepan over medium heat add 2 cups milk. Cut vanilla bean in half then split lengthwise. Scrape seeds into saucepan and add pod.
  2. In a separate bowl whisk 1/4 cup milk, salt, egg yolk and sugar. When milk begin bubble add egg yolk mixture to saucepan.
  3. Stir well and continue simmering until mixture thickens; be careful not to scorch. Pudding is ready when mixture is thick enough to coat a spoon.
  4. Remove from heat; discard vanilla bean pod and add butter. Stir well and ladle into serving dishes; chill for two hours.
