Freezer Peach Jam

Another classic freezer jam recipe, this freezer peach jam is an ideal recipe for any peach-lover who wants to incorporate their favorite fruit into a jam recipe. This jam goes well on an assortment of breads, biscuits and other baked goods.

Ingredients

  • 3 1/2 cups prepared peaches
  • 3 1/4 cups sugar
  • 2 tablespoons lemon juice
  • 1 package Certo Light Pectin

Instructions

  1. Peel and pit ripe peaches. Chop finely or put through blender.
     
  2. Measure fruit into a large bowl.
     
  3. Mix pectin with 1/4-cup of sugar; add to the fruit and let stand for 30 minutes.
     
  4. Add balance of remaining sugar and stir for 3 minutes.
     
  5. Pour into containers, leaving 1/4-inch at the top for expansion.
     
  6. Let  stand at room temperature for 24 hours. Store in the freezer.

Can I use a sugar substitute? I love just about anything peach but , I am a diabetic.
