Baked Pork Chops and Macaroni Creole

Ingredients

  • 4 thin shoulder pork chops
  • 1 tablespoon salad oil
  • 1 cup onions, sliced
  • 1 clove garlic, crushed
  • 1 pound canned whole tomatoes (undrained)
  • 1/2 teaspoon thyme, dried
  • 1 bay leaf, crumbled
  • 3/4 teaspoon salt, or to taste
  • 1/8 teaspoon pepper, ground
  • 2 cups cooked elbow macaroni

Instructions

  1. Wipe pork chops with damp paper towel, trim excess fat.
     
  2. Place on rack in broiler pan, broil on both sides until nicely browned.
     
  3. Preheat oven to 350 degrees F.
     
  4. In hot oil in a large, ovenproof skillet, sauté the onion and garlic, stirring occasionally, until tender, about 5 minutes.
     
  5. Add tomatoes, thyme, bay leaf, salt, and pepper and mix well.
     
  6. Add cooked macaroni to tomato mixture, mix well.
     
  7. Arrange chops on top and bake, covered, for 40 minutes or until chops are tender.

Yes, you can brown the chops in a skillet (as opposed to broiling them in the oven). Just brown them lightly, though, because you will continue to cook them in a 350* oven for another 40 minutes. To reduce the number of pans to clean, just brown the chops in the ovenproof skillet, remove them and cook the vegs in the same skillet. Add seasonings and pasta, and top with the chops. Cover and bake.

Please adjust the picture as just looking at the bland macroni is not as pleasing as the reading of the recipe

I am a Southern cook and I have been cooking for many years. Not many people know how to cook macaroni and tomatoes (with a small amount of onion and bacon seasoning). I was amazed at this recipe. Totally new to me. In Tennessee, pork chops fits perfect with macaroni and cheese and boxed stuffing on the side. Is it not strange how we fit food together?

What temperature do you bake these at? Can you brown them in a skillet?
