Semi Di Melone


  • 1/2 small chopped onion
  • 4 Tb. butter
  • 1 lb. seme di melone pasta
  • salt to taste
  • 2-1/2 cups boiling unsalted chicken broth
  • grated cheese, such as Parmesan or Asiago, optional


Saute the onion gently in the butter for about 5 minutes, till translucent. Add the pasta, stir it around well to coat the grains, then add the salt and the broth. Bring back to the boil, cover, reduce the heat to low, and simmer for 3 minutes. Turn off the heat and leave for 30 minutes, then uncover, fluff up with a fork, and add grated cheese if desired. This makes a tasty side dish; 6 large servings at least. It keeps well and reheats easily in the microwave.
