"A perfect noodle recipe if you are planning to do a DIY dinner date with your special someone. You can add some vegetables to bring more freshness to the dish. Peppers and snap peas would be great additions. You could also add a teaspoon of sriracha to the sauce just to heat things up a little bit. A perfect soba noodle recipe for those who want an easy and healthy dish. Asian inspired meals are great with sparkling wines and aromatic whites. But, you may not want to pop a bottle of bubbly on a weeknight. So, our suggestions are ones that would work better for a midweek nights."

Ingredients

  • 1 pound Soba Noodles
  • 2 tablespoons Low sodium soy sauce
  • 1 tablespoon sesame Oil
  • 1 teaspoon Brown Sugar
  • 1 teaspoon black sesame seeds
  • 1 tablespoon vegetable oil
  • 14 ounces firm tofu
  • 1 cup cabbage
  • 1 clove garlic
  • 14 ounces chicken breast
  • Salt and Pepper to taste
  • 3 ounces Carrots

Instructions

  1. In a large pot of boiling water, cook the noodles according to the instructions on the package. Drain and rinse with cold water, set aside

  2. Mince the garlic.

  3. Shred the cabbage

  4. Julienne the carrots

  5. Chop the tofu into rectangular strips

  6. Cut the chicken breast into bite-sized pieces

  7. Heat oil in a wok and saute garlic until fragrant.

  8. Add the chicken and saute for 2 minutes.

  9. Add the tofu, mix well and saute for another minute.

  10. Add the carrots and cabbage and saute for another 2 minutes.

  11. Add the soba noodles and crank up the heat and saute for 2 minutes.

  12. In a small bowl, mix the soy sauce, sesame oil, and brown sugar.

  13. Add the sauce and saute the mixture for 1 minute until fully incorporated.

  14. Top with black sesame seeds.
