Ginger Fudge


  • 3 cups sugar
  • 1/2 cup milk
  • 1/2 can sweetened condensed milk
  • 125g butter chopped
  • 1/4 tsp salt
  • 1 Tbs golden syrup
  • 1 tsp vanilla essence
  • 1/2 cup coarsely chopped crystallized ginger
  • 1/2 cup coarsely chopped walnuts


Place the sugar and milk in a very large microwave-proof bowl (preferably Pyrex). Microwave on HIGH power for 3 minutes. Stir well. Add condensed milk, butter, salt and golden syrup. Microwave about 10 minutes, stirring 3 minutes. The mixture should be golden brown. Stand the bowl in a bowl of ice to help the mixture cool. Add the vanilla, ginger and walnuts, then beat with a wooden spoon for about 5 minutes, until the mixture thickens. Pour into a greased 20 cm cake tin and let stand until set. Cut into squares while still warm.
