Ham Shank with Plum Sauce
"We call it gammon, you call it ham. We call it gammon hock, you call it ham shank. It is all the same thing: a leg of pork that has been cured and sometimes smoked. There's a bone in and lovely meat around it, it needs to be cooked slow and low. Soak it, boil, it, roast it - just like ham. It likes mustard and honey, it will be so tender you won't need a carving knife."
