Gluten-Free Squash & Caramelized Onion Quesadilla

For quick and easy quesadilla recipes that are also friendly to those with a gluten intolerance, you've gotta try this fantastic recipe. This Squash & Caramelized Onion Quesadilla is delicious, you won't even notice the gluten-free tortilla, it's that good.

Ingredients

  • 4 French Meadow Bakery Gluten-Free Tortillas
  • 1/2 white onion
  • 1 tablespoon olive oil
  • 1/4 cup mashed squash (any variety like acorn, butternut, etc.)
  • 3/4 cup shredded smoked Gouda cheese

Instructions

  1. Chop onion into small pieces and heat olive oil in pan over medium heat. When hot, add onions, stirring occasionally.

  2. Cook for about 10-15 minutes until onions are golden brown. Set aside. Heat pan to medium-low heat and add 1 tortilla.

  3. Top with a sprinkle of cheese. Then add half of onions and squash. Top with another sprinkle of cheese and another tortilla. Cook for about 3 minutes.

  4. Flip over and cook for another 3 minutes until cheese has melted and tortillas are golden brown. Repeat with remaining ingredients.

I love quesadilla and I love squash too! This is a great combination. I should try this! Maybe I should sprinkle a little pepper on the mashed squash. I think this would taste bland if not.
