Bahama Fried Fish

Ingredients
- 3 pounds fresh fish fillets
- lemon pepper to taste
- garlic salt to taste
- 1 cup pancake mix
- 1 cup Italian bread crumbs
- 1/4 cup c water
- 1 egg, beaten
- peanut oil for frying
Instructions
- Preheat electric skillet to 350 degrees F.
- Cut fish in bite-sized pieces.
- Lightly sprinkle with lemon pepper and garlic salt.
- Combine pancake mix and bread crumbs in a paper bag.
- Dip fish in water and egg mixture.
- Shake fish in bag to coat with crumbs.
- Fry in oil for 7 minutes, or until golden brown, turning once.
- Serve immediately.

A tasty and economical meal that everyone in the family can enjoy! We added a little chopped fresh garlic and chili which gave the dish a lovely flavor kick. Our accompaniments were flavored rice and a delicious fresh salad from our garden. Altogether a very good meal that the whole family ate with relish.
