Scotch Eggs

Ingredients

  • 8 hard boiled eggs
  • 1 lb. bulk pork sausage
  • 1/2 cup fine dry bread crumbs
  • 1/4 teaspoon paprika
  • 1 beaten egg

Instructions

Cool and shell eggs. On a lightly floured board flatten sausage into an 8 X 9 inch square. Cut into 8 pieces. Mold each piece around each egg. Combine bread crumbs and paprika. Dip meat in slightly beaten egg, roll in crumb mixture. Place in shallow baking dish on a rack. Bake for 20 minutes in a 375 degree oven.
