Looks yummy! I wondering whether it would be better to add the vanilla extract after the simple syrup has cooled so as to not evaporate off the extract while the syrup is hot. I like the color of the orange juice (perfect for fall), but I bet apple juice or a combination of orange and apple juice would be yummy too.
