I have been doing a lot of experimentation in the kitchen lately with various herb infused beverages and health tonics, and this looks like a wonderful flavor combination. I actually grow a variety of thyme in my garden called lemon thyme, which would be perfect for this! This is one instance where you really do not want to use the made from concentrate bottled lemon juice - fresh is best!
