"You might be thinking how weird pancake mix lava cookies sounds, trust me it does sound pretty strange, but it’s seriously an easy way to bake and dig into molten lava cookies. I found recipes online for pancake mix cookies and thought it would be fun to see how a lava cookie would turn out. For the record, this recipe did not disappoint. It created a cookie with a crunchy outside and a gooey molten inside. All you need is pancake mix, sugar, 1 egg, some chocolate, and a jumbo cupcake pan to bake these bad boys. There is no hassle to these cookies; they’re simple as well as delicious."

I recently have gotten into making cake mix cookies, so the idea of Pancake Mix Molten Lava Cookies seemed feasible. Well I have to tell you, they are more than feasible...they are fabulous, and so easy to make. It is best to serve them warm, fresh out of the oven for the full "molten lava" effect, but I can honestly say that even if they are completely cooled, there is no loss in flavor and enjoyment.
