From the Editor: I have such great memories of making strawberry shortcake using Bisquick. In my family, it was an easy summertime dessert that we all looked forward to! We always sliced and sugared the strawberries a few hours before it was time for dessert so that they would release their juice and become all syrupy and delicious. I was in charge of making the shortcakes, and my brother would make fresh whipped cream for a topping. The combination of warm short cakes, sweet strawberries and syrup, and whipped cream was just delicious! Everyone in my family enjoyed this simple dessert, and we still often make it when we get together today. It still tastes just as good as I remember it, and I love sharing the recipe with the next generation.

Preheat oven to 425 degrees F.

Stir Bisquick, milk, sugar and butter until soft dough forms. Drop about 6 spoonfuls onto an ungreased cookie sheet.

Bake 10-12 minutes or until golden brown.

Split shortcakes; fill and top with strawberries. Sprinkle sugar on strawberries and top with whipped cream or Cool Whip.

I grew up on a u-pick strawberry farm. This was a staple recipe in our household in the summer! My Grandma would make this for us all the time. It's truly delicious once you mound it high with sliced strawberries and whipped cream. Sub-out the whipped cream for vanilla ice cream (soft-serve is the best) and you have a whole other level of yumminess! I will be making this recipe for years to come.

This recipe has been on the back of the Bisquick and Jiffy Mix boxes for years. I always use it when I make strawberry shortcake. It's delicious!

Oh my gosh, this shortcake is so good, reminds me of the days when my mom would make it homemade before the sponge stuff came out.....I used other fruits since one of my daughters is allergic to strawberries, canned blueberry or blackberry pie filling is fabulous and quick because you can freeze the shortcake. I used creme fresche instead of whipped cream and it was to die for. Great to bring to BBQ's or serve because everyone can make their own and it becomes a fun thing.

This is the way my Mom always made it (I'm 73). People don't know what they're missing when they buy those spongy things at the grocery. My Daddy poured some milk over the top of his. It's a truly yummy recipe. After all, it's short cake, not sponge cake.
