We did not have any bologna so used sliced Spanish Chorizo sausage instead. Also we did not have any celery so replaced it with some green pepper. All in all it is a really good dish. Flavorful and filling with some crusty, fresh Italian bread from Marco, our magical local baker.

I have never heard of using bologna in a salad before, but this does sound really good. I like the use of white cheddar because it adds a bit of class to the cheap meat. It is a great dish for those with little money or no way to get more groceries at the tiem.

We called bologna, "Poor Man's Steak. It is so good!

It was bound to happen. Bologna has grown up. I have loved bologna sandwiches since I was a kid, and I absolutely adore this Throw Together Bologna Salad.
