  • 1 head of green cabbage, shredded
  • 1/2 red pepper, sliced
  • 1/2 cup carrot, shredded
  • 1 small onion, sliced
  • 1 teaspoon salt
  • For the Dressing
  • 2 cups mayonnaise
  • 1/2 cup sugar
  • 1/4 cup white vinegar
  • 1/4 cup vegetable oil

Instructions

  1. Combine all vegetables and 1 tsp. salt.

  2. Mix together all dressing ingredients until well blended.

  3. Pour over vegetable mixture and refrigerate 2 hours or more to let flavors blend together.

This tasted great without being too overloaded with the dressing. I'll definitely be making this again!

The proportion of dressing compared to the cabbage mixture was spot on. It wasn't too heavy or too light. This would be great for a summer barbecue!
