This is just an ok recipe for chicken salad, if you're in a hurry, or if you don't ever cook an 'actual' chicken. The best chicken salad is made with chicken which you cooked, NOT from chicken in a can (which is loaded w/preservatives huge amounts of sodium). Dice up some celery, instead of using the stuff from a jar, and add either a few minced scallions, or a finely diced shallot. I was never a fan of the mustard which many people add to their cold salads, since they tend to overpower the other yummy ingredients. There are times when a shortcut doesn't work so well in a recipe, if you're looking to make a delicious dish. BTW, a mixture of white dark meat is best in a truly yummy chicken salad.
