We are ready to celebrate with these Union Jack cupcakes, which are almost too cute to eat. The good news is that they're also simple to make! We suggest using a boxed cake mix in order to make your cupcakes, but you can really use whatever recipe you like best.

Ingredients

  • 1 box white cake mix (plus ingredients needed to prepare the mix, such as oil, eggs, etc.)
  • 2 containers vanilla frosting
  • red and blue food coloring
  • piping bag

Instructions:

  1. Make cupcakes according to box package instructions. Set aside and allow to cool completely.

  2. Empty contents of one frosting container into a large bowl. Mix with blue food coloring, set aside.

  3. Divide second frosting into two bowls. Keep one white and mix red food coloring into the second bowl. Set aside.

  4. Frost cupcakes blue. Allow to hardened, approximately 10 minutes.

  5. Using a piping bag, pipe the white frosting on the blue tops to resemble a British flag.

  6. Go over the white frosting with the red frosting, using a piping bag.

I love this easy Union Jack Cupcakes recipe and even though the Royal Wedding is over, I live in the UK and can think of other festivities that these can be made for. My question is, can you darken the blue frosting to a more royal blue, rather than the pale blue shown? And is the piping for the 'red' really as pink as it looks on the photo? I haven't worked with food coloring before, except to dye Easter Eggs, so I am not sure how that would work.

These cupcakes are AMAZING! I have been thinking of them for days after trying them! They are perfect for a Royal Wedding celebration!

These cupcakes look like such fun to make. They are very festive and certainly are something to get excited about in anticipation of Prince Harry's wedding. I'm from British decent but do not live there so I am going to make these on the 19th May for a bit of patriotism!
