Slow Cooker Eight Layer Casserole

Ingredients

  • 1/2 pound lean ground beef
  • 2 tablespoons imitation bacon bits
  • 1 small onion, chopped
  • 1 can (15-ounces) tomato sauce
  • 1/2 cup water
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 2/3 cup long-grain rice
  • 1 can (8.75-ounces) whole-kernel corn, drained
  • 1/2 cup green bell pepper, chopped

Instructions

  1. Crumble ground beef evenly over bottom of a slow cooker. Sprinkle with bacon bits, then onion.
     
  2. In a medium bowl, combine tomato sauce, water, chili powder, salt, and black pepper; pour half over beef and onion layers.
     
  3. Sprinkle rice evenly over top, then corn. Top with remaining tomato sauce mixture, then bell pepper.
     
  4. Cover and cook on low about 5 hours or until rice is tender.

I think I am missing some ingredients. 1) Ground beef 2) Onion 3) Rice 4) Corn 5) Bell pepper Other than these, tomato sauce and the spices, including the bacon bits are all flavorings, so I came up with a 5 layer casserole, not an 8 layer one.

I'm just beginning to use a slow cooker. I assume the meat can be spread without cooking first? Please clarify.

Hi aemgem: Yes, the ground meat is meant to be put into the slow cooker raw. It will cook along with the rest of the ingredients during the 5 hours in the slow cooker. -- Editor of RecipeLion

I wish you would state the number of servings for the recipes. Guessing at the servings isn't always the best thing lol

No one answered the question about the hamburger being cooked or not. What is the answer? I would like to make this next week. Looking forward to the answer. Thanks.

I made this yesterday but doubled the ingredients for the amout of people eating. It was easy and good, not great. I did use brown rice and it held up very nicely to the cooking time. This could use more flavor but a good basic recipe to start with. Am using the left overs with eggs tomorrow for on the run breakfast burritos

@ Chef 18831, The rice should be raw when put in the slow cooker. Five hours should be plenty of time for the rice to cook, but if it is not tender at that time, let it cook a little longer. I hope this helps! --Editors of RecipeLion

It doesn't mention if the rice should be cooked first or use it raw...I am sure it does make a difference. Does anyone know?
