What do you get when you combine yellow cake mix, peanut butter and chocolate milk? You're well on your way to this delicious Rise and Shine Slow Cooker Coffee Cake. This easy cake recipe is something to look forward to when getting out of bed is hard. Making cakes in your slow cooker is such a simple thing to accomplish, yet most people never even think about using it for that. It's time to rethink this handy device and start using it for everything you can -- especially around the holidays when oven space is limited. In the meantime, make this delicious coffee cake and wake up to something sweet this morning!

Preparation Time10 min

Slow Cooker Time HIGH3 hr

  • 2 cups chocolate milk
  • 1/3 cup creamy peanut butter
  • 2 eggs
  • 1 package yellow cake mix
  • 1/2 cup chopped pecans
  • 1/2 cup water

  1. Find a ceramic baking dish that will fit inside the crock of your slow cooker.  Grease and flour this dish and set it aside.

  2. Combine all ingredients in mixing bowl, beat for 2 minutes.

  3. Pour batter into prepared dish.

  4. Place dish in slow cooker. Lay a few layers of paper towels across the top of the slow cooker.  Place lid over the top.  If paper towels become saturated during cooking, quickly replace with new dry layers.

  5. Cover and bake on HIGH for 2 to 3 hours. You'll know the cake is ready when a toothpick inserted in the center comes out clean.

This is unusual in a variety of ways. First, it's fairly rare to encounter a cake recipe that uses a slow cooker. Second, it's odd to have a coffee cake that incorporates chocolate milk and peanut butter. Being a fan of both, though, I'm attracted to a cake using those ingredients, no matter the cooking process. I'll have to rummage around and see if I can find a suitable pan for use with our slow cooker. Anyone know how this would translate (time and temperature) to using a regular oven?

I agree that we don't use our slow cookers for baking cakes. I'm getting into cake baking in my slow cooker and I've been collecting recipes. I didn't expect to see peanut butter in something called a coffee cake (I'm a coffee addict). I do eat peanut butter but only spread on toast. I have never used it in a recipe but I guess I am going to have to try it sometime.

This recipe is so different. I've never made a cake in my slow cooker, and I definitely have never used chocolate milk in a recipe. I have to try this once. It sounds like a coffee cake recipe my family will enjoy on a Sunday morning with fruit, milk, and coffee.
