I've been craving cream cheese frosting. This cake looks so yummy. I am going to make it. I love ginger cake but have never made one and I agree with Jaclyn that gingerbread is one of the best Christmas flavors. It's the cream cheese frosting that sold me on this one.

This cake is just perfect for the holidays, either to bring as a hostess gift or to serve after a holiday meal. This would even be yummy in the morning as breakfast with a cup of coffee! I especially love this recipe because it can be made dairy-free (if I use non-dairy cream cheese for the frosting). The cranberry garnish on top adds a touch of elegance! Yum!
