Earthquake Cake

This fun recipe for layered cake mix cake will be the talk of your next potluck or family dinner. Earthquake Cake gets its name from the cream cheese swirl mixed into the decadent cake, appearing to crack it apart. This simple cake recipe doesn't even need frosting because of the gooey cream cheese mixture running through it, which makes the cake super moist. Plus, it includes chocolate chips, coconut and pecans for added flavor and texture.

Our youngest son saw the words Earthquake Cake and insisted on baking it right away, lol! Besides the fact that, afterwards, the kitchen looked like there had been an earthquake, the cake was wonderfully delicious! We used The Haters version of the recipe (because we did not have any pecans) and we did pour a family favorite chocolate sauce over the top. Heavenly!

I love that the recipe has three versions. I could take the traditional or everything in the pool varieties to my parent's house for a family thing. I would have to do the hater's way for here at home. My husband and daughter don't like nuts or coconut in things. Cream cheese in cake, no matter what, is amazing.

I cannot resist a cream cheese dessert. Yum!
