All the great, classic tastes of breakfast are baked into this one delicious casserole. You will absolutely fall in love with this easy blueberry pancake casserole! This fruity breakfast casserole uses frozen pancakes, but they will taste like they were made from scratch. Filled with heavy cream, vanilla extract, heavy cream, and cinnamon, this is the perfect sweet breakfast treat. The tart pop of the blueberries is totally perfect in this dish. If you've never tried Pancake Casserole before, give this stunning recipe a try!

Ingredients

  • 1 package (1.5 pounds / 18 pancakes) frozen pancakes, cut in half
  • 1 cup heavy cream
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon ground cinnamon
  • 1/3 cup granulated sugar
  • 3/4 cup frozen blueberries

Pancake Casserole

Instructions

  1. Place pancakes in casserole dish.

  2. Combine cream, eggs, cinnamon and sugar.

  3. Pour over pancakes and place in refrigerator for 1 hour.

  4. Remove and top with blueberries.

  5. Bake at 350 degrees for 45 minutes.

  6. Serve with maple syrup.

Pancakes + casserole = genius. I love breakfast casseroles you can make ahead of time and just pop in the oven in the morning. Whether you make a savory flavored one with bacon and cheese, or a sweet version with fresh blueberries and syrup, you can't go wrong.

This was a really tasty twist on a breakfast staple! The pancakes were sweet and fluffy with a warm casserole texture on the bottom.

This was delicious. The pancakes were light and fluffy on top, and just a little gooey and custard-like at the bottom. SO good!
