Beef and Noodle Casserole

Creamy Beef and Noodle Casserole is the perfect way to feed a family of four. This dish uses very simple, budget-friendly ingredients and is a crowd-pleaser every time.

This ground beef casserole was very easy to make. While the egg noodles are cooking, brown the ground beef. As the ground beef and tomato sauce simmers, chop the green onion and mix it with the sour cream and cream cheese. While the casserole bakes, wash the dishes. As you can tell, there is a lot of multitasking in this recipe!

This cheesy noodle casserole is so good, people at the office went back for seconds. The ground beef tastes like a meatball because it was cooked with tomato sauce and garlic. The sour cream/cream cheese mixture unites the casserole and the cheese is golden perfection. This is an excellent weeknight dinner.

Serves: 4

  • 3 cups cooked egg noodles
  • 1 pound ground beef
  • 1 (15-ounce) can tomato sauce
  • 2 cloves garlic, minced
  • Salt, pepper, and Italian seasonings (to taste)
  • 1 (4-ounce) package cream cheese, softened
  • 1 cup sour cream
  • 3 green onions, chopped
  • 1 cup grated Cheddar cheese
  1. Preheat oven to 350 degrees F. Spread cooked noodles in the bottom of a medium casserole dish (2 quart).
  2. In a frying pan, brown ground beef and garlic. Drain and discard fat. Add tomato sauce to the meat, heat and simmer for 15 minutes. Season with salt, pepper, and Italian seasonings to taste. Pour meat the mixture over the noodles in the casserole dish.
  3. In a small bowl combine the cream cheese with the sour cream and mix until smooth. Stir in green onions. Spread over meat mixture. Sprinkle Cheddar cheese over top of the cream cheese mixture.
  4. Bake, uncovered, for 35 minutes.

Easy to prepare and a hearty, filling meal for the whole family. We all loved it! The sour cream adds a lovely flavor and I included just a little chopped garlic and chili for flavor. It is a delicious recipe and uncomplicated to prepare. I mixed the beef and other ingredients into the pasta and it all came out as a wonderfully tasty Italian meal!

With all of the cheesy goodness going on in this recipe, how can you ever go wrong? I'm betting this would be a super indulgent delight if it were used in a lasagna...or replace the beef for chicken instead, add some of your favorite fresh greens and it can be made into an impressive sub as well. Either way, this is sure to make even the most finicky of eaters happy.

Casseroles are some of my favorite recipes, and this one is quick and easy to make. To make this dish healthier, the following modifications can be made using lean ground beef, lite cream cheese, and lite sour cream for the ingredients. If desired, low-fat cheddar cheese could also be used. So the egg noodles will have a good consistency without being too soft after baking, they should be drained while they are still undercooked. The pasta will continue to cook in the oven.

With all the wonderful comments, I have to try this recipe, but I was concerned how strong the taste and texture of cream cheese was with a whole 4 oz package being added in addition to the sour cream. I made a casserole once that was too much cream cheese for some people, so maybe I should cut the cream cheese in half. Is this sauce more white or red tomato? I can't tell with the wonderful cheese topping! thanks!

I enjoyed this casserole! I don't think I could eat it (or serve it) by itself, but I thought it was really filling. Plus, it had a really great flavor to it. I'd definitely eat it again.

Very tasteful and will be making it again. Simple layers of noodles, meat sauce,sour cream mixture and cheese make the dish appealing as well. I think you could increase the noodles to 3 to 4 cups to make a few more servings without decreasing the over-all flavor of the dish - and I likely will do this the next time just so I have some leftovers! I am "member 7179766" and posted the comment on this casserole. However in my proofreading I missed a mistake. About halfway down in my comment I said that I cooked noodles in salted water and "then added 1/2 teas. + 1/4 teas. pepper in the meat." It should read "added 1/2 teas. salt + 1/4 teas. pepper in the meat sauce." I apologize for this.

Delicious! I encourage you to try this recipe as is. It lends itself to addition of taco or Italian seasoning, but try it first. I have been so tired of everything with tomato sauce tasting Mexican or Italian and wanted something without that but still have a good taste/flavor. This does it. I didn't have green onions for sour cream mixture so chopped 1/4 c. regular onion and cooked that with the meat, along with 1 garlic clove. Cooked noodles in salted water then added about 1/2 teas. +1/4 teas. pepper in the meat. Otherwise prepared exactly as recipe directed. The 15 min. cooking time for tomato sauce and meat is crucial (at least 10 min). This evaporates some of the juicy liquid, thickens meat sauce, and intensifies flavor. This recipe is a keeper for me--thank you!
