  • 1 1/2 cup butter, softened
  • 1 1/2 cup shortening
  • 12 cups powdered sugar
  • 5 cups maraschino cherry juice
  • Additional maraschino cherries for decorating

Instructions

  1. Make cake mix according to package instructions. Add the ¼ cup cherry juice.

  2. Pour in two 8-inch pans and bake, according to package instructions.

  3. Combine frosting ingredients in a stand mixer with paddle attachment.

I've never been much of a cherry person...but I do love maraschino cherries on occasion in desserts or beverages. It sure does seem like an awful lot of sugar for the frosting to me and where in the world would you get 5 cups of maraschino cherry juice? Do they actually sell it in that much volume? Well, either way...the concept of this cake sounds amazing however, I'm thinking I'd probably use a white cake mix instead because the sprinkles in the funfetti cake are kinda ruining the cherry vibe for me. LOL

I usually don't like anything cherry-flavored, but this was so. amazing. I loved it. For as many cherry ingredients as it has, it wasn't overly cherry, which I liked. And it's pretty, too!

This was really good! The cake was such a pretty pink color, and the cherry flavor was sweet and subtle.
