"Looking for a delicious way to celebrate Christmas morning? I think you will absolutely love this gluten-free, vegan gingerbread pancakes recipe! They have all the flavour of Christmas yet easy peasy to make! 

Dry Ingredients
120-gram buckwheat flour
½ tsp cinnamon
¼ tsp ginger
½ tsp baking powder
pinch of nutmeg
pinch of baking soda

Wet Ingredients
150 ml plant milk
1 flax egg ( 1 tbsp ground flaxseed+3 tbsp water)
1 tbsp melted coconut oil
2 tbsp black treacle topping
100-gram coconut yoghurt
1 medium pear
1 tsp maple syrup"

Cooking MethodSkillet

  1. Chopp your pear. Heat a non stick frying pan and add your pear with few tablespoons of water. Fry till pear is slightly brown. Add your maple syrup and mix through frying for an extra half a minute till all pieces are coated. Set aside. Clean the pan. Add your wet ingredients to a blender following with dry. Blitz till smooth batter is formed. Heat the frying pan again. You can add oil to your pan if using. Fry your pancakes till the bubbles form on top and then flip over and cook for aditional minute. Keep going till you use uo all the batter. Divide between 2 plates. Top your pancakes with yoghurt and caramelised pear! ENJOY!
