Love love love frittata recipes like this. It's so easy to add whatever veggies you have on hand and have it turn out just as tasty. I am intrigued by the addition of sweet potatoes here and wondering if it might be better to shred the sweet potato instead of cutting it up in chunks. Generally, I am not a fan of them in big portions. Has anyone tried shredding instead of chunks?
