You'll definitely rise and shine when you try these Handheld Breakfast Quesadillas! Hearty and full of flavor, this easy breakfast recipe is the perfect way to shake up the morning routine by adding some serious flavor. The quesadillas are filled with chorizo sausage, eggs, and cheese, and can be topped with plenty of your favorite ingredients, including sliced avocado. These easy breakfast quesadillas are sure to be crowd-pleasers with everyone in your household. The handheld breakfast recipe is also a quick and easy way to grab a bite of breakfast before dashing out the door to school or work. Dining while on the go has never been so tasty — or easy!

  • 6 ounces chorizo sausage, cooked and drained of grease
  • 4 eggs, scrambled
  • 1 cup shredded Mexican Blend cheese
  • Mexican hot sauce
  • 4 (10-inch) flour tortillas
  • Sour cream
  • Sliced avocado
  • Hot sauce


  1. Spray a large skillet or griddle with cooking spray.

  2. Place the tortillas on a microwave safe plate and cover with a damp paper towel. Microwave for 30 seconds to warm.

  3. On a work surface place the 4 tortillas. Divide the eggs on each tortilla, leaving a ½ inch border. Divide the cooked chorizo over the eggs, then sprinkle with the hot sauce. Divide the cheese last over the eggs and chorizo.

  4. Fold the top of the tortilla down over the filling to the center, working clockwise continue to fold the tortilla over until the filling is covered. You will have 5 folds.

  5. Heat the skillet or griddle until hot. Place the quesadillas folded side down and cook for 3-4 minutes until browned. Flip over and brown the other side.

  6. Serve with the sour cream, avocado, and hot sauce.

Chorizo...yes, please! This is such a great combination for breakfast but I don't think it needs the hot sauce since the chorizo is generally spicy on its own. I was thinking how about trying a poached or fried egg instead of the scrambled and adding some hashbrowns and whatever meat you prefer...then the egg can ooze into everything and be extra amazing. Or what about Denver omelet ingredients inside? This recipe is so versatile and perfect to customize for the pickiest of eaters in your family.

I wasn't expecting much flavor from these, but they were full of flavor! I'll definitely be making these for future breakfasts.

LOVED these. It had just the right balance of cheese, eggs, and meat, and I loved having a refreshing slice of avocado on top (and of course plenty of sour cream). This is an excellent recipe for brunch with friends.

I would eat these every day for breakfast if I could! It's the prefect combination of meat, cheese, and egg -- definitely a hearty meal to start off your day right!

Love the chorizo! It's everything I want in a breakfast on the go!
