Ukrainian Meatballs

Ingredients

  • 1 pound extra lean ground beef
  • beef consomme to cover, about two 10 oz cans, diluted
  • 1/2 pound large whole fresh mushrooms
  • 6 to 8 small whole onions
  • 6 whole bay leaves

Instructions

Shape the ground beef into meatballs about the same size as the mushrooms. Heat consomme in a saucepan. Add bay leaves and meatballs; simmer 20 minutes. Trim mushroom stems; add mushrooms and onions to saucepan. Simmer additional 20 minutes. Liquie may be thickened with cornstarch (two teaspoons dissolved in two tbsp cold water) during last 10 minutes. I don't know what's traditional, but I serve this with mashed potatoes.
