Crispy Chicken Fried Steak

Thinly pounded steak and very hot oil are the secrets to this Crispy Chicken Fried Steak recipe. Smothered in savory country fried steak gravy and served with mashed potatoes, this dish will be the hit of the dinner table tonight!


  • 1 pound boneless beef, cut into four pieces
  • 1 cup flour
  • 1 egg
  • 1 cup milk
  • 1 small onion, chopped
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 2 tablespoons fresh parsley chopped (or two teaspoons dried)
  • salt to taste
  • pepper to taste
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder


  1. Pound steaks to about 1/4" thickness.
  2. Rub both sides with the salt and pepper to taste, 1/2 teaspoon paprika and 1/2 teaspoon garlic powder.
  3. Heat oil in a large skillet. Oil should be about 1/4" high.
  4. Beat egg and milk together in a bowl.
  5. In another bowl, season the flour with salt and pepper to taste, 1/2 teaspoon paprika, and 1/2 teaspoon garlic powder.
  6. When the oil is hot, dredge the steaks in the flour, then in the egg mixture, then back again in the flour.
  7. Place them immediately in the skillet. Fry on both sides until golden brown. Remove and set aside.
  8. Remove most of the oil from the skillet, leaving behind the bits of meat etc.
  9. Reheat the oil and add the onion. Cook until golden.
  10. Add about 3 tablespoons of flour, whisking it in.
  11. Gradually whisk in the chicken broth scraping the bottom well, add a little water if it is still too thick.
  12. Bring to boil then add cream and parsley and cook another minute.
  13. Serve with mashed potatoes, corn bread, or biscuits.
