Ingredients

  • 3/4 cup butter or margarine
  • 3/4 cup powdered sugar
  • 1 1/2 cup flour
  • 3 tablespoons fresh lemon juice (1/2 lemon)
  • rind of 1 lemon, grated
  • 3 eggs
  • 1 1/2 cup sugar
  • 3 tablespoons flour
  • 1 teaspoon baking powder
  • chopped nuts, optional

Instructions

  1. Preheat oven to 350 degrees F.
     
  2. Mix butter, sugar and flour until crumbly (using your fingers works best).
     
  3. Pat mixture into a 9 x 13" pan. Bake for 12 minutes.
     
  4. Mix together lemon juice, rind, eggs, sugar, flour, baking powder and nuts (if desired). Pour over baked and cooled crust and bake for 15-20 minutes.
     
  5. Sift powdered sugar over top. Cut into pieces while still somewhat warm.

I love this recipe. I love the lemony sweetness of the bars. My family loves it when I make them. I always make mine in a 8x8 pan. I will try it in a 9x13 that will make even more to share. 3/4 of a cup of powdered sugar is not too much?
