Vegan Hatch Chipotle Tacos

"These Vegan Hatch Chipotle Tacos are a bold, smoky, and satisfying twist on classic tacos, perfect for any occasion. Packed with plant-based goodness, the filling combines pre-roasted hatch chili peppers and Prickly Pear Chipotle Jerky from allyallsfoods with sautéed onions and fresh corn. The rich flavor comes from a blend of cumin, paprika, garlic powder, and a touch of salt, making each bite a delicious explosion of spice and smokiness. Fresh cilantro is added at the end to maintain its vibrant color and herbaceous flavor. To make this recipe, start by heating grapeseed oil in a skillet over medium heat. Sauté onions until they’re translucent, then add the spices, letting the aroma bloom as they coat the onions. Stir in the hatch chili peppers and chipotle jerky, allowing them to cook together for 5-10 minutes, melding their flavors beautifully. Toss in the fresh corn and cook until it’s tender and bright. Finally, stir in the cilantro, just enough to wilt but still keep its fresh green vibrance. Salt to taste, and the filling is ready! Serve this flavorful filling in warm corn or flour tortillas, which can be toasted lightly for extra flavor. For a perfect finish, top the tacos with creamy avocado slices and tangy pico de gallo. These garnishes not only add layers of flavor but also balance the smokiness of the filling. Ready in under 30 minutes, these tacos are an excellent choice for quick weeknight meals, gatherings, or even taco Tuesdays. With ingredients like Prickly Pear Chipotle Jerky, this recipe brings authentic southwestern flavor to your table. Pro tip: Fire up your tortillas over an open flame for a lightly charred, smoky finish that complements the spicy filling perfectly. Dig in and enjoy!"
