"Hearty and healthy, these simple vegetarian enchiladas are packed with fresh seasonal veggies and creamy goat cheese. Red peppers, broad beans (fava beans), asparagus and lots of herbs from the garden make this a truly summery enchilada recipe. It is easily adapted to include what you’ve got in season locally to you! I like to bake these enchiladas with a mild, tomato based sauce but you can use whatever sauce is your favorite! Kid friendly too."

I couldn't find any fava beans at my local grocery store, so I used some sauted zucchini instead since I had some growing outside in my garden. I think they turned out great! The goat cheese adds a little bit of a special touch, but you could also use some crumbled queso fresco or Mexican cojita cheese. I don't even miss the meat!
