Enchiladas Verdes

"These tasty Enchiladas Verdes are stuffed with seasoned sweet potatoes, corn, and black beans, then smothered with green enchilada sauce and a Mexican blend of cheeses. For an over-the-top flavor sensation, make homemade green enchilada sauce. Enchiladas are traditionally made with corn tortillas, but we prefer flour tortillas. Do whatever tickles your taste buds. Make the enchilada sauce up to 3 days in advance and store it in an airtight container in the refrigerator or freeze it. Heat and soften corn tortillas so they are pliable enough to roll. Heat in a nonstick skillet for 15 seconds on each side or microwave 4 tortillas, covered with damp paper towels, for 20-30 seconds. If you love cilantro, add a few tablespoons to the chicken mixture."
