Peanut Butter Stuffed Sweet Potatoes

These potatoes are delightfully rich and gooey. Who says baked potatoes can't be a dessert?

Ingredients

  • 4 sweet potatoes
  • 2/3 cup milk
  • 1/4 cup peanut butter
  • 1/4 salt
  • pepper
  • 1/3 cup peanuts, dry roasted, chopped

Instructions

  1. Bake potatoes in a preheated 425 degrees F oven until tender. Remove from oven, cut each in half, scoop potatoes from skin and mash thoroughly.
     
  2. Add milk, peanut butter, and seasonings. Beat until fluffy, then refill skins.
     
  3. Brown on a baking sheet at 425 degrees F. Sprinkle chopped peanuts on top and return to oven until reheated.
