Leftover Mashed Potato Pancakes

It's the day after Thanksgiving and you don't know what to do with all those extra mashed potatoes. Or you just had company over and you find yourself with a ton of leftover spuds. Either way, this recipe for Leftover Mashed Potato Pancakes is perfect! Fry up some golden delicious potato patties and enjoy your mashed potatoes in an entirely new way. Nothing goes to waste and you get to enjoy a second helping of your favorite side dish. It's win-win with this leftover mashed potato recipe!

Ingredients

  • 1 egg
  • 2 teaspoons baking powder
  • 2 cups mashed potatoes
  • milk, as needed
  • butter, as needed
  • jam, for serving

Instructions

  1. Add egg and baking powder to mashed potatoes.
     
  2. Add milk until mixture is the same consistency as pancake batter. Fry in butter.
     
  3. Serve with butter and jam.
