You can never go wrong with cookies for a special occasion or party. But for a holiday like Valentine's Day, you need to step up your dessert game, and what better way than with this easy-as-can-be Valentine's Day cookie pie recipe.

This cookie pie combines Valentine's Day M&Ms and chocolate hearts in the batter for a super sweet treat you can't help but dig into! 

Kids and adults will love this recipe, so you'll be all set no matter who you're cooking for. If you're looking to sweeten up a school party or holiday potluck, look no further. Not only is this recipe super easy to make, no one can resist a tempting, gooey, cookie pie!

Ingredients

  • 2 sticks unsalted butter, melted
  • 1 cup light brown sugar, packed
  • 1 cup granulated sugar
  • 1 large egg plus 2 egg yolks, at room temperature
  • 1 tablespoon vanilla extract
  • 2 cups all-purpose flour
  • 1/4 cup cornstarch
  • 1/2 teaspoon salt
  • 2 cups Valentine's day M&M's
  • 3/4 cup assortment of chocolate hearts (Your choice! We used milk, dark, cookies and cream, etc.)

Instructions

  1. Preheat oven to 350 degrees F. Lightly spray a 9-inch pie plate with non-stick baking spray; set aside.

  2. In a large bowl, add the melted butter, brown sugar, and granulated sugar; beat well until combined. Beat in the egg, egg yolks, and vanilla. Add in the flour, cornstarch, and salt and mix until just combined. Do not overmix!

  3. Fold in the M&M's and assorted chocolate hearts. Spread the mixture into the prepared pie plate. Top with additional M&M's and chocolate hearts, if desired. 

  4. Bake for 38 to 40 minutes, or until the top is golden brown, the edges are completely set. The center of the pie may be slightly jiggly. If your cookie begins to look too dark, you can place a piece of tin foil over the top until it's done baking.

  5. Place pie on a wire rack to cool for at least one hour. 

  6. Slice, serve, and enjoy!
